BEER a low-alcohol frothy beverage made from water, malt or malt and its substitutes, hops or its modified forms, and brewer’s yeast; it contains the products of fermentation of saccharides, in particular ethanol, carbon dioxide and unfermented extract; The smell and taste of beer shall be malty and hoppy with mild to strong bitterness, sharpness and fullness according to the type of beer. FRUIT WINE a beverage produced by the alcoholic fermentation of modified fruit juice; Fruit wine should have the appearance, smell, taste and colour of the juice of the type of fruit involved; the colour of fruit wine may be less intense than the colour of the juice used. Fruit wine shall be clear and free of sediment, with the sweetness according to the type of fruit concerned. MALT WINE a beverage produced by the fermentation of wort; Malt wine shall have the appearance, smell, taste and clarity appropriate to the specific type of malt wine. MEAD a beverage produced by the alcoholic fermentation of honey diluted with water; Mead must have colour, taste and smell of the constituents used. MIXED BEVERAGE a beverage prepared by mixing at least two beverages, which may be carbonated with carbon dioxide; A mixed beverage shall have the organoleptic properties corresponding to the raw materials used.
